Introduction

This is a delicious and easy soup that simmers in the slow cooker all day. This is a delicious and easy soup that simmers in the slow cooker all day.
Number of Servings: 4

Ingredients

    2 cups cubed cooked chicken
    1.5 cups salsa
    1.5 cups corn (frozen or canned)
    1 can black or pinto beans, rinsed and drained
    2 cups chicken stock
    1/4 cup chopped onion
    1 Tbs taco seasoning
    1/2 tsp chili powder
    1/4 tsp cumin
    lime juice to taste

Directions

Spray a slow cooker container with butter-flavored cooking spray. In prepared container, combine beans, chicken, and corn. Add chicken stock and salsa. Mix well to combine. Stir in seasonings. Cover and cook on LOW for 6 to 8 hours or high 4-5 hours.. Mix well before serving. Serve with shredded cheese, sour cream, and/or tortilla chips as desired (not included in calorie calculation). Makes 4 hearty two cup servings.
