Introduction
I really like saag and love it when we go out for Indian food. This is my attempt to re-create it at home, with the ingredients I had on hand. I added corn and mushrooms for extra texture and taste, but feel free to substitute your own vegetable of choice. I really like saag and love it when we go out for Indian food. Ingredients

2 14oz cans spinach
1 14oz can unsweetened corn
1 14oz can mushroom pieces and stems
2 tbsp green curry paste
2 tsp garlic
1 tsp lemon pepper
1 tsp rubbed sage
1/2 tsp cilantro
1/2 tsp rosemary
1/2 tsp oregano
1/2 tsp ground cloves
1 cup fat-free yoghurt
Directions
In a non-stick cooking pan or wok, combine spinach (liquid included), drained corn and drained mushrooms.
Add spices and curry paste.
Cook on medium until liquid is mostly gone, stirring regularly.
Add yoghurt, stir until yoghurt is integrated.
Cook for 10 more minutes.
Serve over rice and enjoy.
