Introduction

This is a fast, simple way to make fresh-tasting restaurant-style salsa year round. It's great as a dip, but save some for eggs the next morning! This is a fast, simple way to make fresh-tasting restaurant-style salsa year round. It's great as a dip, but save some for eggs the next morning!

Ingredients

    2 cans diced tomatoes, no salt added
    1-2 cloves of garlic, minced
    1 jalapeno, seeded and minced
    Handful of fresh cilantro
    Juice of one lime
    pinch of salt
    pinch of cumin
    pinch of chili powder
    Bottled jalapenos with 1 T juice (not in nutritional info.)

Directions

Place all of the ingredients in a food processor and process until smooth. Taste--adjust salt and seasonings to your taste. (I usually need to add more chili powder and bottled jalapeno juice, but that's just me.) Try to fix it ahead of time so yo can let it sit for a few hours in the fridge, but you can certainly eat it right away.
