Introduction

I tried this one day and my kids liked it and asked for it again, which surprised me because last time I made bread pudding they wouldn't eat it. I tried this one day and my kids liked it and asked for it again, which surprised me because last time I made bread pudding they wouldn't eat it.
Number of Servings: 5

Ingredients

    1 cup Unsweetened Applesauce
    1 cup 1% or non fat milk
    3 large eggs
    ¼ cup brown sugar
    4 slices (about 4 cups) whole wheat white bread
    1 lg can Sliced Peaches
    2 tsp or more of Cinnamon
    1 Tbl Molasses
    1/4 tsp Ginger

    Streusel Topping

    2/3 cup Quick Cooking Oats
    3 Tbsp Brown Sugar
    1/2tsp Cinnamon



Directions

Preheat oven to 350° F. Combine apple sauce, milk, eggs and brown sugar, cinnamon,ginger and molasses in medium bowl. Whisk until well combined. Gently stir in bread cubes until well moistened. Mix in about half the can of peaches. Pour mixture into lightly greased 8 x 8-inch baking pan. Top with rest of the peaches and then the streusel topping, if desired. Bake 30 minutes, or until toothpick inserted into center comes out clean. Serve warm.

Streusel Topping: Mix together 2/3 cup quick-cooking oats, 3 tablespoons brown sugar, and ½ teaspoon ground cinnamon until thoroughly combined
**this served me and my four children so I say five servings, about 1 1/2 cups each.

    Very good and filling. Husband and I enjoyed it very much. Maybe next time I will try using sliced apples instead of peaches. Yum! - 1/29/11
