Introduction

Ingredients

2 small, thin salmon fillets, fresh or thawed
1 10-oz pkg frozen chopped spinach, thawed
1 4-oz pkg fat free cream cheese, softened
1 small onion diced/minced fine
1 lemon sliced, seeded
Dill Weed, salt & pepper to taste
Directions
Squeeze all extra moisture out of thawed spinach and mix in bowl with cream cheese and minced onion. Season to taste with a little salt and pepper.
Pat 1/2 spinach mixture into bottom of small baking dish large enough to hold salmon fillets flat. Lay salmon fillets on top of spinach layer. Sprinkle dill lightly over salmon, then place a couple lemon slices on top of that. Cover with remaining spinach mixture and pat down over fish.
Bake @ 350 for about 30 minutes or until fish flakes with a fork. May want to add a little chicken broth to pan if it looks dry (could use water too, just what ever is handy).
Serve with cooked brown or wild rice.
