Ingredients

    1 lb Organic boneless skinless breast, sliced or pounded into thin cutlets
    1/2 cup flour
    1 tsp salt
    1 tsp pepper
    1 lemon
    1 Tbsp capers
    1 cup hot chicken broth + 1 Tbsp flour

Directions

Combine the salt and pepper with the flour. Remove any visible fat from the chicken. Dredge the chicken in the flour and shake off all excess flour. Heat the oil in a very large non-stick skillet and brown the chicken on both sides, then transfer to a plate.

Add the hot broth and flour mixture to the hot pan and gently scrape up anything stuck to the pan, then add the lemon juice and capers and stir. Once the sauce thickens a bit, add the chicken back in, reduce heat to low, cover and simmer until chicken is cooked through, about 15 minutes.

One serving is 5 ounces of cooked chicken.
