Number of Servings: 2

Ingredients

    Olive oil or canola cooking spray
    2 cups (approx 1/2 lb) fresh green beans, topped and tailed
    1 1/2 tsp olive oil
    2 tsps smoked paprika
    1/4 tsp salt or 1/2 tsp kosher salt
    1/2 tsp fresh ground black pepper
    1 tbsp grated parmigano-reggiano or manchego cheese for garnish (optional)

Directions

1. Preheat oven to 450 degrees.
2. Spray a large, heavy cookie sheet with cooking spray. Add green beans, olive oil (drizzling slowly, as you may not need all of oil) and spices and toss to combine.
3. Roast for about 25 minutes, stirring halfway through cooking time.
4. Garnish with a light sprinkle of parmigiano-reggiano or manchego cheese, if desired.
Serves 2.
