Introduction

Ingredients

    Boneless skinless chicken breasts, 2
    1 tbsp butter or margarine or sesame oil
    2 tbsp smooth peanut butter
    1 tbsp low sodium soy sauce
    1 tbsp Italian salad dresing
    1/2 tbsp maple syrup or honey
    enough water to make the sauce pourable
    spices to taste : chile powder, garlic powder, ginger, cumin

Directions

The chicken is cut into bite size pieces and stir fried in butter. The sauce is made separately by simply stirring together the ingredients, and is poured over the chicken after it's cooked and out of the pan -- much easier cleanup this way. This makes about four half-breast servings and because of the peanut butter is very filling. Optionally, broth of your choice could be used to thin the sauce, though that'd add a handful of extra calories.
