Ingredients

    Toufayan Bakeries Whole Wheat Pita, 1 serving
    Member's Mark Canned Chicken, 0.33 cup
    Green Bell Peppers, 0.25 cup, chopped
    Red Ripe Tomatoes, 2 slice, medium
    Mushrooms, fresh, .25 cup, pieces or slices
    Fat Free Shredded Mozzarella, 0.25 cup
    Old El Paso Green Chili Enchilada Sauce, 0.25 cup

Directions

This recipe is easily expanded to accomodate more diners!

Drain chicken. Slice tomato, then chop slices (they fit better that way). Chop peppers. Layer all ingredients as desired, pouring sauce over ingredients but under cheese. (Most pitas are a funky bowl-shape from the packaging, so this is a better technique than trying to spread sauce on first.) Tomato can be added under cheese, over cheese, or placed on after baking depending on personal preference.

Place in center of cookie sheet, and bake 10 minutes at 350. At this point, if cheese is not browned as desired, broil until it is to your liking. Pita will be crispy, veggies will be tender crisp, with just the right amount of flavor! Ole!

Note: this dish can be made for vegetarians, simply substitute a single serving of black beans per pizza for the chicken.
