Ingredients

    2 oz. soba noodles
    1 Tbsp. olive oil
    1 Tbsp. lemon juice
    2 tsp. rice vinegar
    ΒΌ tsp. wasabi paste (optional)
    6 oz pouch or fillet of pink salmon
    3/4 cup chopped collards or kale
    1 Tbsp. toasted sesame seeds

Directions

1. Prepare soba according to package directions. Meanwhile, lightly sautee salmon in a little olive oil until cooked through, around 7 minutes. Also boil the collards or kale while cooking the salmon. 2. Whisk together olive oil and lemon juice in a small bowl. 3. Add vinegar and optional wasabi, whisking until smooth. 4. Combine all ingredients in a large bowl. Either flake fish with a fork and add or serve fillet on bed of noodles.
