Introduction

Simple egg and cheese omelette for dinner. Half this for a lunch or snack meal. Simple egg and cheese omelette for dinner. Half this for a lunch or snack meal.

Ingredients

    4 medium Eggs
    50 grams Mozzarella Cheese
    1 tsp Olive Oil
    Any desired herbs or vegetables.

Directions

In a bowl, mix eggs and half the mozzarella. Grease a pan with olive oil and pour in mix, top with the remainder of the cheese.

Good ingredients to add if desired are peppers, mushrooms and spices.

This will make two servings (half each).

    Made this today for lunch, but changed things up a bit.

    3 eggs
    1/2 cup spinach
    2 chopped green onions
    then topped with feta cheese rather than mozzarella.
    Ate with 3 slices of tomatoe.

    Very good! Lots of flavor.

  • Had to find a way to substitute the high cholesterol . Instead opt for " Half fat Italian mozerella cheese ( Tesco value ) - 6/21/16

  • i tried this once and wasnt too impressed.the second time i only used 2 of the 4 eggs yolks...and used a low fat cheddar cheese - 4/4/11
