Ingredients

    2 pork chops (3 oz., lean meat)
    2 tbsp. flour
    Nonstick cooking spray
    1 large potato, peeled and thinly sliced
    1 clove garlic, minced
    1 cup chicken broth
    .25 cup shredded cheese
    salt and pepper

Directions

Salt and pepper pork chops and coat them in flour, shaking off excess. Spray a nonstick skillet with cooking spray and brown pork chops on both sides. Add chicken broth, sliced potato, and garlic, reduce heat and cover. Simmer until potatoes are tender, adding more liquid if needed. Top with cheese and cook covered for 5 minutes, or until cheese is melted. Makes 2 servings.

    Incredible!
    Made these for dinner tonight. They were DELICIOUS. I substituted vegetable broth for the chicken broth-it gave the potatoes a much better flavor, in my opinion. But I'm sure they would be good either way. Will definitely make these again!! - 6/27/11

    Very Good
    I used Mrs. Dash Garlic Herb Seasoning mixed with the flour to try and add some flavor. It was still slightly bland, but definitely worth making again. My family all ate without complaint which is a good thing. - 1/7/10
