Ingredients
-
2 - 2.5 lb port sirloin roast (or chops) - trimmed and diced
1/4 cup flour
Salt & pepper
1 14oz can diced tomatoes
1 cup roasted fresh jalepenos
1 cup roasted fresh green chilies
1/4 cup dry brown gravy mix
4 cloves minced garlic
2 qt water
Directions
Begin by using a larger sixe pot or dutch oven. Brown pork in olive oil in batches so all pork is browned nicely. Add a bit more olive oil to pan and add flour. Stir and coat; let flour cook for about 1 minute. In a blender, add jalepenos, garlic, salt & pepper, most of the can of tomatoes (add the rest of tomatoes and juice directly to pan), and brown gravy mix. Puree until garlic is well blended. Add liquid mixture to pan and scrape all bits from the bottom of the pan. Bring to a boil; once chili has cooked for a bit, taste and season with salt accordingly. Cook for at least one hour; the longer it cooks the better it is. If chili isn't thick enough, retrieve some liquid from pot and let cool; add a bit of flour at a time and once flour is completely mixed, add slurry mixture back to the chile.
