Ingredients

    Cod (fish), 2 fillet
    Brown Rice,cooked, 2 cups
    Red Bell Peppers, 1 cup, chopped
    Snap peas, 1/4 cup
    Leeks, 1/2 cup
    Lemon Juice, 1 lemon yields
    White Wine, 1 fl oz
    Butter, unsalted, 1 tbsp

Directions

Layout sheet of parchment paper about twice the length of a sheet pan on a sheet pan.

Place fish on paper, surround with rice, cover with vegatables. Add butter pieces, dash of wine and juice of one lemon.
Salt and pepper to taste.

Fold over remaining parchment paper, roll edges and stable shut.

Bake at 425 for 30minutes.

    My husband loved it! I threw in some extra seafood - prawns and scallops and also addes some Buk Choy and Asparagus and seasoned the Cod with Cajun Seasoning. Turned out Beautifully! - 2/13/08
