Introduction

My neice uses coconut flour so I decided to try the pancakes. They are really good. Gluten free, soy free, low fat and carb, and sugar free. You can combine coconut flour with regular flours as well. Ingredients

    4 TB melted land-0-lakes light butter
    4 TB fat free 1/2 & 1/2
    2 tsp Splenda
    1/2 tsp vanilla extract
    1/4 C eggbeaters or 4 eggs
    4 TB Coconut Flour
    1/2 tsp Baking Powder
    may add dash of salt if desired

Directions

Mix liquid ingredients together,
mix dry ingredients together and add the wet to the dry and blend well.
Heat griddle or fry pan spray with cooking spray.
drop spoonfulls onto hot pan and cook as you do normal pancakes. Serve hot with choice of syrups jelly or fruit.

    I love these pancakes. I use xylitol instead of splenda. Coconut milk or almond milk instead of 1/2 &1/2. And instead of butter I use coconut oil. Very good. - 10/5/10

    Delicious, quick to make. I make a batch and then keep them on hand. I can eat a lot, but not of these - they are so filling. I've put blueberries in them. Just watch them, burn easily. - 12/24/12

    I, being new to gluten free cooking, made a boo boo. I followed the recipe, but like Dotlarson & 2catsperson, I was a little confused by the recipe. I ended up making TB tablespoon and put in 1/4c eggbeaters. Apparently it should have been 1 1/4 c eggbeaters or 4 eggs. I will make them again! - 2/25/12

    What is TB...it looks like 2 tb (tablespoons) coconut flour...would lke to try it, but don't know how to read it... - 6/27/11
