Introduction

Ingredients

    1 lb jumbo shrimp, peeled and deveined
    4 bell peppers, mixed colors, cubed
    1/2 lb cherry tomatoes
    1 medium onion (or similar), cubed
    1 can pineapple chunks
    Other vegetable or fruit chunks as desired--mushrooms are quite good, too

    For Marinade:

    1/4 cup reduced sodium soy sauce
    1 tbsp rice wine vinegar
    1/4 cup peanut or vegetable oil
    Salt and pepper to taste
    1 tsp minced ginger (optional)

Directions

If using wooden skewers, soak for at least 30 minutes prior to using. Peel and devein shrimp, wash and cube vegetables. Prepare marinade in tupperware or glass container. Reserve 1/4 cup of the marinade to baste the kabobs while grilling.

Add shrimp to marinade, allow to marinate for 15-30 minutes.

Thread alternating pieces of shrimp, cherry tomato, bell pepper, onion and pineapple on each skewer.

Broil the kabobs over medium hot charcoal for 10-15 minutes, turning frequently and basting with reserved marinade.
