Introduction

Ingredients

    2 large garlic cloves, minced
    1 Tbsp + 1 1/2 tsp extra virgin olive oil
    1 Tbsp balsamic vinegar
    1/8 tsp ground black pepper
    10 oz. salmon steak (1 or 2 fillets)
    1 1/2 tsp chopped fresh parsley or basil

Directions

In a large, heavy nonstick skillet, cook the garlic in 1Tbsp of the oil over very low hear, until the garlic's aroma is apparent, 30 to 60 seconds, stirring. Immediately add the vinegar, half of the pepper. Remove to a bowl and cover with foil to keep warm.
Season the fish with the remaining pepper. Heat the remaining 1 1/2 tsp oil in the same skillet over medium heat. Add the fish and cook until browned on the first side, 4 to 5 minutes. Turn and cook until the fis is just opaque throughout, 3 to 4 minutes. Serve topped wiht the garlic sauce and parsley or basil.

    So easy, and I'm always looking for a new fish dish. I used dried herbs as no fresh on hand. A little of both basil and parsley, rehydrated and added to the sauce. Thanks! - 4/8/10
