Introduction

Ingredients

1 large onion, chopped (about 1 cup)
1 large green pepper, chopped (about 1 cup)
1 16 oz. Hillshire Farms Lite Smoked Sausage, cubed
1 cup chopped or thinly sliced carrots
1 cup chopped or thinly sliced zucchini
3.5 cups diced tomatoes (approx. 2 cans)
3 cups low-sodium chicken broth
.5 cup water
kidney beans - 2 cups soaked, or 1 can
4 oz. whole wheat pasta- rigatoni, elbow, or penne
Directions
Add onions, green pepper, sausage, and carrots to a large dutch oven or soup pot. Saute 5 - 7 minutes or until sausage is browned and veggies are tender. Add zucchini, diced tomatoes, broth, and water. Stir and bring to a boil. Reduce heat and simmer 20 - 40 minutes or until vegetables are desired tenderness. Add kidney beans (drain liquid), and pasta. Simmer 15 minutes more or until pasta is done.
You can season this stew with different herbs and spices depending on your family's tastes. I've made it with italian seasonings or Creole seasonings. Can also substitute diced potatoes for pasta, or omit both entirely. Add a sprinkle of parmesan or shredded reduced-fat cheese for a finishing touch if desired (not included in nutrition info).
Makes at least 8 regular soup-bowl servings.
