Ingredients
-
6 whole-wheat English muffins (110 cal/muffin)
1 cup of Lean Turkey Ham (diced)
1 cup of 2% fat Shredded Cheddar Cheese
1 cup of light mayo (I like Best Foods)
1/2 cup of black olives (sliced)
1/2 cup of tomato (I actually used 1 whole Roma Tomato)
1/4 cup bacon bits
3 green onions
Directions
Preheat oven to 350 degrees. (I used a toaster oven.)
Combine all ingredients into a bowl and mix well. Cut English Muffins into halves. Put about 1/3-1/4 cup of the mix on top of the muffin and cook on rack for 20 min. (May need a bit longer for an oven - 20 min. was for the toaster oven.)
You can make all 12 servings for a party (I discovered this at a "Girls' Night In" party) or individually for your own lunch/dinner or snack.
Each serving is only one half of the muffin with approximately 1/3 cup of mix.
