Ingredients

    2 medium potatoes for baking
    1 large red bell pepper
    4 medium zuchinni
    1 tbs olive oil
    1 tsp garlic powder
    1 tsp italian seasoning herbs

Directions

wash and chop vegetables. place in baking dish. toss with olive oil, garlic powder, and seasoning herbs. bake at 325F for 45 min or until potatoes are done. makes about 4 one cup servings.
