Light and colorful, delicious as a side dish or a small salad, it compliments any meal, especially good with salmon or fresh tuna.

Number of Servings: 4

Ingredients

    1 Medium Cucumber 9-10 oz peeled and diced
    1 average 3-4 oz avocado peeled, cored and diced
    1 med-lg Tomato (6oz avg) diced
    1 15 oz Can Garbanzo ( Chick Peas)
    2 Tablespoons Lemon Juice
    Seasonings, 1/2 tsp Sea Salt, Pepper to taste.
    I added Onion Powder, as I had no fresh onion available...

Directions

Wash and peel cucumber, and tomato. Slice and dice into dice sized chunks.
Peel and core avocado, dice into dice sized pieces.
Combine all ingredients and serve!
Makes 4 - 1 Cup Servings
