Ingredients

    4 pork chops
    2Tbsp. oil
    1-1/4c. water
    3/4c. Long-grain rice, uncooked
    3/4 c. onion,chopped
    1 tsp. salt
    2c. frozen corn
    141/2oz.canned diced tomatoes, undrained
    pepper to taste

Directions

Makes4 servings.
In large skillet brown pork chops in oil over medium-high heat; drain and set aside. Combine water, rice, onion, and 1/2 tsp. salt in the skillet. Place pork chops over rice mixture; top with corn and tomatoes; Sprinkle with pepper and remainining salt; bring to a boil. Reduce heat; cover and simmer for 20 to 25 minutes or until pork and rice are tender. Let stand 5 minutes before serving.

    I tried this last night and I was surprised how good it was. The pork was nice and tender too. Next time I think I'll add peppers and more rice (modify other ingredients as well) to make a one pot full-course meal. Thanks DOBBYZIP. - 7/16/09
