Ingredients

    4 large sweet potatoes, cubed
    1 tbsp olive oil
    1/2 tsp oregano, salt, black pepper (each)

Directions

Preheat over to 350 degrees.

Spray a baking dish with cooking spray. Cube sweet potatoes and toss in baking dish with olive oil and seasonings.

Cover baking dish with aluminum foil and cook for 30 minutes. Uncover and cook for an additional 30 minutes.

    i slice the potatoes and boil them 1st then put the herbs and some dried garlic over the potatoes and cook in the pan with fry lite and black pepper. really nice - 2/28/17

    I cubed the potatoes so that it wouldn't take as long to cook. Sweet potatoes are not usually something that I eat but I think I will be eating them more often. Paired well with the rotisserie chicken that I had bought. I think I want to experiment with other herbs and spices. Delicious - 11/29/14
