Introduction

One day, I decided I'd add a can of pumpkin to a spice cake mix and see what happened. It was good, so the next time, I added pecans and ground flax seeds. Tonight, I substituted unsweetened applesauce for the oil. I sprinkled brown sugar on the batter in the pan and sprayed butter spray on top of that. I ate a piece warm from the oven with a huge squirt of whipped cream. It was wonderful! (My favorite way to finish this cake is to poke holes in it with a wooden spoon, then heat a can of cream cheese frosting in the microwave and pour it on top--but I'm trying to be healthy, and the whipped cream was not bad!) Ingredients

    1 Duncan Hines Moist Deluxe Spice Cake
    3 large eggs
    1,1/3 cups water
    1/3 cup unsweetened applesauce
    1,1/2 cup chopped pecans
    1 15 oz can pumpkin
    2 TBSP brown sugar
    I Can't Believe it's butter spray, 10 sprays

Directions

Preheat the oven to 350. Whisk together the first six ingredients in a large mixing bowl. Pour into a greased and floured 9x13 pan. Sprinkle on brown sugar and spray with butter spray. Bake until a toothpick inserted in the middle comes out clean, approximately 35 minutes, depending on your oven. 12 servings.
Store in the refrigerator (Unless you think you might like Pumpkin Wine Cake!)
