Introduction

Ingredients

    1/2 cup chopped tomatoes (vine-ripened are best)
    2 hardboiled eggs (preferably organic or "fresh from the chicken")
    1/2 cup mayonnaise (lite)
    1 small green onion
    2 slices of any bread you choose (open faced or cut into half)

Directions

Blend in a blender and spread onto your bread. Delicious.

    Very Good
    I really liked it, but I thought there was just a bit too much mayonnaise for the items in recipe, so I added some chopped cucumbers to thin it out. I would never have thought about adding tomatoes, that was the best sandwich I have had in ages! - 4/1/10

    Thanks for the feedback! I edited the recipe to include 1 English Muffin as the bread, which added about 80 extra calories. Still under 200 for 2 open face sandwiches. Check out the calorie count of other breads you might try, but the English Muffins add a good crunch and are quite filling.
