Ingredients

Pancakes:
1/2 c. Whole Wheat Berries (or 1/2 c. Whole Wheat Flour)
1/2 c. Whole Spelt (or 1/2 c. Spelt Flour)
1 Large Egg -slighty beaten
1/4 t. Sea Salt
1/2 t. Baking Soda
1 c. Buttermilk
Spiced Apple Topping:
1 Large Granny Smith Apple
1 Small Gala or Similar Apple
1 T Black Strap Molasses
1 T Raw Agave Nectar
Pinch of each:
Cinnamon, Nutmeg, Ginger, Cardamom, Tumeric, Cloves (You can adjust to your own liking), salt

Directions
To Make Apple Topping"
Core and slice the apples. Place in a small saute pan with some water (approx. 1/2 c). Add remaining ingredients and cook with lid on until the apples are soft. Remove lid and cook until desired consistency...it is reminds me of apple butter but with apple skin :)...they add a nice tartness to compliment the sweetness of the apples, molasses & agave.
Pancakes:
Grind the grains in a coffee grinder as fine as you like. In a 4 c bowl, place the grains and the buttermilk and mix together. Let sit for about 10 minutes to soften the grain a bit. Add the remaining ingredients and a bit of water to create the desired consistency. Cook on a hot seasoned griddle or cast iron skillet. These cook more slowly than traditional white flour pancakes.
The texture will be somewhat chewy. Serve with spiced apples on top. Hearty, healthy & best of all delicious!
