Number of Servings: 4
Ingredients

3 eggs, yolks separated from whites
1/4 cup sugar
100 grams of bittersweet chocolate
100 grams of butter, unsalted
Directions
1. Melt the butter in a double boiler and add the chocolate to the butter and melt.
2. Beat the egg yolks and the sugar together.
3. Beat the egg whites until soft peaks form.
4. Let the butter/chocolate mixture cool slightly, then add the yolk sugar mixture. Mix well.
5. Fold in the egg whites to the chocolate mixture.
6. Grease ramekins (or muffin tin, or whatever you are using) with butter. Grease them well! (or it will stick).
7. Fill ramekins (or what your using) with mixture until 2/3 full.
8. Bake in an oven at 400F for 7-10 minutes.
Eat in ramekins or turn upside down onto a plate.
Enjoy! :)
p.s. This mixture will stay good in the fridge if you prepare this ahead of time. And you can put this in small ramkins to bring down the serving size.

I know this isn't "sparkpeople" friendly tip, but when you grease your ramekins you should also add a little sugar and chase it around the dish making sure it covers the inside of the dish. This will make sure it doesn't stick. (Just like you do with flour in a cake pan) - 4/6/09
