This is simple jerk chicken to make. Full of flavor and VERY satisfying. It can be put with a simple side salad w/ honey-vinegar dressing and sliced mango. Ingredients

    Jerk Seasoning for Chicken Thighs

    1/2 tsp nutmeg
    1/2 tsp cinnamon
    2 tsp allspice
    2 tsp thyme
    1 tsp course ground black pepper
    1 tsp cayenne pepper
    1/2 tsp onion powder
    1/4 tsp clove
    1/2 tsp garlic powder
    2 tsp dried chives
    2 limes(juiced)
    2 tsp white vinegar
    2 tsp orange juice
    2 tsp yellow mustard
    1/2 tsp ground ginger
    1 tsp ground bayleaf


Directions

Heat oven to 350 degrees......Mix juices with dry spices creating a wet jerk sauce. Baste 4 skinless, boneless chicken thighs with the sauce until well coated...place in a baking pan sprayed with cooking spray and cover pan with aluminum foil.sealing tightly....cook for 30 minutes or until done. Serve with milder tasting side items as this is a robust flavored dish. Enjoy!

    This was barely edible. I followed the recipe exactly but the flavor was way too strong and the chicken looked like it was rolled in a mud puddle. Nothing like the photograph. - 1/17/17

    Very Good
    This was a quick and easy recipe for a jerk sauce. I did add a jalapeno because hubby and I like our food spicy. - 3/11/11
