Introduction

This is a recipe from Better Homes & Gardens, New Dieter's Cookbook, Meredith Books, 1st ed. 1992, page 151. I modified it by using 2 servings of egg whites in lieu of 2 of the 6 eggs required, used real cheddar cheese and omitted all types of pepper. Ingredients

    Non stick cooking spray
    1 c.(5 oz.) chopped cooked ham
    1/2 c. chopped onion
    4 beaten eggs
    2 srvg. egg whites
    3/4 c. 1% cottage cheese
    1 medium tomato, thin sliced
    1/4 c. (1 oz) shredded cheddar cheese

Directions

Spray 10 in skillet & heat over medium. Add ham & onion. Cook 4 minutes.
In bowl combine eggs & cottage cheese. Pour over ham in skillet.
Cook over medium low heat. As egg mixture sets, run a spatula around edge of skillet, lifting eggs to allow uncooked portions to flow underneath. Continue cooking till egg mixture is almost set.
Place skillet under broiler 5 inches from heat for 1 -2 minutes or till eggs set.
Meanwhile, halve tomato slices. Arrange atop frittata. Sprinkle cheese atop tomato. Broil 1 minute.
