Introduction
These are thin, chewy brownies with three "shots" of extra flavour in them - one of Kahlua, one of espresso, and a healthy addition of "chocolate shot" - the pure chocolate sprinkles you get in higher-end ice cream places and bakeries! The "roux-like" method of making the dough appealed to me - I found it on Vegweb and used it as my base. Ingredients
-
1 cup flour, divided
1 cup water
1 cup whole wheat flour
1 cup sugar
1 cup brown sugar
1 teaspoon salt
3/4 cup baking cocoa
1 tbsp vanilla
1 shot (1.5 fl oz) prepared espresso
1 shot (1.5 fl oz) Kahlua liqueur
1/2 cup canola oil
1/2 tsp baking powder
3/4 cup chocolate sprinkles (AKA chocolate shot)
Directions
Combine water and 1/2 cup of the AP flour in a pot and bring to a low boil, stirring constantly, until it forms a gluey paste.
Let cool completely.
In another bowl, mix sugars, salt, vanilla, cocoa and oil. Then add the rest flour-water mixture. Mix well.
Add the remaining 1 1/2 cups of flour, baking powder and the nuts or chocolate chips, if you choose to add those.
