Introduction
I wanted a soup that was very tasty and low calorie that I could have with lunch and dinner and this I found to ber very tasty and filling. It is the "Diet Soup" with a few extra flavorful ingredients. Ingredients

5 Carrots, Sliced
3 Celery Stalks, Sliced
3 Large Onions, Sliced
3 Garlic Cloves, Minced
28 oz. can of Crushed Tomatoes
14.5 can of Diced Tomatoes
1/2 head of Cabbage ,chopped
5 oz (half bag) of Spinach Leaves ,chopped
2/3 cup of frozen Peas
16 oz. bag of frozen Green Beans
2 Green Bell Peppers., chopped
2 tsp. Salt
2 tsp. Pepper
1 tsp. Dried Basil
1 tsp. Red Pepper Flakes (more if you prefer)
2 Chicken Bouillon Cubes
12 cups Water
(if you don't like cabbage you can use the entire bag of spinach and omit the cabbage or use the whole cabbage head instead of spinach)
Directions
Coat pan with nonstick cooking spray.
Over medium high heat add carrots, celery, onions, and garlic.
Cook, stirring occasionally, 5 minutes.
Stir in tomatoes with their liquid.
Add remaining ingredients.
Heat to boiling over high heat, stirring occasionally.
Reduce heat to low, cover and simmer, stirring occasionally, 15 minutes or until vegetables become tender.
Makes 26 = 1 Cup Sevings
