Introduction

Ingredients

2 skinless boneless chicken breast cut bite size
1tsp salt
1 tsp pepper
2 tlb of extra virgin olive oil
1 small onion
1 small red bell pepper
1/3 pkg of conecuh cajun smoked sausage cut into bile size
petite cut diced tomatoes with zesty jalapenos
1 can black beans
1 quart of chicken stock
3 garlic cloves crushed
dash of hot sauce
a dash of cajun season to taste
(mrs.dash can also be used to add flavor less salt)any flavor
4 small red potatoes diced small
1 cup blue tortilla chips (crushed)
1 cup fine shredded cheddar jack cheese
Directions
wash bite size breast sprinkle with salt & pepper
heat on med.high the extra virgin olive oil, add the chicken to pot lightly browning (2 minutes).
Add sausage & garlic cook another 2 minutes. then add the onion and red bell pepper, cook another 5 minutes(stirring through out the recipe) stir in the tomatoes, black beans, potatoes,hot sauce cajun season. then add the stock. bring to a bubble, reduce heat & simmer until potatoes are tender (about 10-12 minutes)
while simmering preheat brolier
when soup is done turn it our into a 12 x 9 glass casserole dish sprinkle the blue tortilla chips then the cheese evenly over top broil until cheese is just melted.
