Ingredients

    Vegetable Oil, 2 tbsp
    Celery, 1 cup, sliced
    Onions, 1 cup, chopped
    Garlic, 2 cloves minced
    Lightlife Smart Ground Original Protein Crumbles, 12 oz (1 pkg.), crumbled
    Whole Canned Tomatoes, 1 can (28 oz.) cut up w/juice, no salt added
    Petite Cut Diced Tomatoes w/Celery, Onions & Green Peppers, 1 can (14.5 oz.) w/juice
    Light Red Kidney Beans, 1 can (15 oz.) drained and rinsed
    Fresh Corn, 1 can (15 oz.) no salt added, drained and rinsed
    Tomato Paste, 1 can (6 oz)
    Chili powder, 1.5 tbsp
    Ground Cumin, 1.5 tbsp

Directions

Saute the onion and celery in oil over medium heat until translucent. Add in garlic and saute an additional 2 minutes

Add the remainder of the ingredients, reduce heat to low, and simmer 1 to 1 1/2 hours.

Serving Suggestion: Serve hot with reduced fat shredded cheddar and/or non-fat plain yogurt (not included in nutritional information).

    very good recipe-- delicious. But not easy to find the soy crumbles in Florida... Thank goodness Trader Joe's is opening stores near by it will make finding ingredients for healthy recipes much easier - 11/28/13

    Oh this is good! I was out of celery so I added a red bell pepper. yum! Served it with vegan corn bread and a dollop of Tofutti "sour cream." Mmm.... Comfort food at it's best. - 5/13/10

    This was delicious! I used Morningstar Farms Grillers Crumbles. For the canned tomatoes I used three 15 oz cans of diced salt-free tomatoes. I also used low-salt kidney beans. Topped it off with some salsa, kraft fat-free ranch dressing, and diced onions and avocado. I will be making this again! - 6/10/08
