Introduction

I added lentils to my regular chili recipe to get a bit more protein. You could also add other or more beans. I also added shredded carrots for a bit more veg. Ingredients

    300g Ground Beef
    1 Medium Onion (chopped)
    1 can Chopped Tomatoes
    1 can Red Kidney Beans
    2 Cloves Garlic
    1/2 Red pepper
    1/2 cup grated Carrots
    1/2 cup Lentils
    1/2 tbsp olive oil
    2 tsp cumin
    2 tsp cayenne pepper
    2 tsp oregano
    10 cups water (more or less add as needed)
    salt and pepper to taste

Directions

1) Brown minced beef with onions and garlic.

2) Add crushed tomatoes, carrots, herbs and spices and water to cover.

3) Let cook for at least 2 hours (more is better). Add water as needed.

4) 15-20 minutes before serving add lentils and beans.

Makes approximately 7 cups. 1 cup= 1 serving.
