Ingredients

1 pound ground beef, cooked and drained
1 jar spaghetti sauce (I used chunky w/ vegetables)
1 cup water
1.5 cup ricotta cheese, fat free
1 block extra firm tofu, drained and mashed
2 eggs
1 block frozen spinach, defrosted and drained
4 oz mozzarella or more if you like
1/2 cup Parmesan cheese
12 oz pkg oven ready lasagna noodles, uncooked
Directions
Makes 8 servings
Mix together tofu, eggs, ricotta and spinach in a bowl. In another bowl mix together cooked ground beef and spaghetti sauce plus 1 cup water.
Grease lightly a 13x9 baking pan. Heat oven to 350.
Put 1 cup of meat sauce in bottom of pan, layer with a layer of noodles. Spread cheese tofu mixture on top with another layer of sauce. Sprinkle some mozzarrella on top, then top with noodles, then cheese mixture, then meat sauce, then mozzarella. End with noodles and the rest of the sauce. Sprinkle mozzarella and parmesan on top.
Cover pan with aluminum foil and bake for 45 minutes. Remove foil and put back in oven until top is browned.
Cool slightly before cutting.
