    3/4 cup cider vinegar
    1/4 cup granulated sugar
    1/4 cup fresh chopped parsley
    4 medium scallions, chopped
    3 cucumbers (with or without peel)

    For sauce:
    1/2 cup plain nonfat yogurt
    1 tsp. granulated sugar
    1/2 tsp. dry mustard


Combine vinegar, 1/4 cup sugar, parsley and scallions in a bowl. Stir well. Cover and refrigerate until cool.

Cut cucumbers in half lengthwise and scrape out seeds with a spoon. Cut cucumbers crosswise into thin half-moon slices. Add cucumbers to marinade. Cover and refrigerate 1 to 2 hours. Drain and serve with optional yogurt sauce.

For sauce, combine yogurt, 1 tsp sugar and mustard in a bowl and stir well. Toss with drained cucumbers.
