Ingredients

    Healthy Banana Bread

    1/4 cup Splenda Brown Sugar
    1 1/2 cups mashed ripe-bananas (3 large)
    3/4 cup vegetable oil, I use canola.
    1/2 cup egg beater
    2 cups whole wheat flour, I use Hodgson Mill whole wheat graham flour.
    1 teaspoon baking soda
    2 teaspoon vanilla
    1/2 teaspoon baking powder
    1/2 teaspoon salt



Directions

1. Heat oven to 325degrees

2. Line a loaf pan, either 9x5x3 or 8x4x 2 inches, with non-stick aluminum foil, spray w/non stick spray

3. Mash bananas, should equal approximately 1 1/2 cups (3 large, 4-5 small)

4. Mix sugar, bananas, oil and egg beater in a large bowl. Stir in remaining ingredients. Pour into pan.

5. Bake until a length of uncooked spaghetti inserted into the middle comes out clean, 60 to 70 minutes. Remove bread and foil from pan and place on cooling rack. Let cool completely before slicing.
