Introduction

A great alternative to potatoes with less sodium less calories and yet tastes EXACTLY like mashed potatoes. A great alternative to potatoes with less sodium less calories and yet tastes EXACTLY like mashed potatoes.
Number of Servings: 2

Ingredients

    1 Head of Cauliflower
    2 Tbsp Butter, unsalted
    1/4 Cup Milk, 1% Milk
    Pepper, to taste

Directions

Cut away leaves from the cauliflower. Chop up cauliflower into large pieces. Because cauliflower takes less to cook larger pieces are best.
Put into boiling water and let cook approximately 20-25 minutes or until soft.
Strain the cauliflower and add the remaining ingredients and mash. Add or subtract butter and milk depending upon your taste. (Just remember if you add to also add additional calories).
Yields 2 servings. Nice size servings

    Incredible!
    So simple and so tasty! I used 1 Tbl butter and added 1 large clove fresh pressed garlic just before mashing, and about 1 Tbl minced fresh parsley. I'd say 3-4 servings (or maybe my cauliflower was "large!") We had this with steamed rainbow chard and turkey breast. - 1/28/14
