Introduction
I made these for my son's Tee Ball game. He has allergies (milk, eggs & peanut butter) so I have to find Vegan Recipes for him to eat. These fit the bill and he loves them!!Similar to Rice Krispy Squares, but with a few more good things added in. I made these for my son's Tee Ball game. Ingredients
-
1/4 C. Blue Bonnet Light Margarine
1/4 C. Soy, Peanut Free Butter
1/4 C. Walnuts, Chopped
1/8 C. Craisins
5 1/2 C. Miniature Marshmallows
5 1/2 C. Honey Nut Cheerios
Directions
I used a microwave but you can do the same on the stove in a deep pan.
1. Melt the butters, add the walnuts & craisins. Stir well.
2. Add Marshmallows and heat until melted (about 1 min in microwave).
3. Add cereal and press into a non-stick sprayed 9x13 pan. Let cool completely and slice.
4. My bars were about 3x4
Enjoy!

Caveat: marshmallows are not actually vegan (or vegetarian for that matter - gelatin).
This looks like a great recipe, but I wanted to throw in my $0.02 so that any new veg*ns won't be fooled.
Maybe you could sub something? I dunno... - 5/26/09

There ARE VEGAN marshmallows. They are made by Sweet & Sara. You can google them to find their website.
