Introduction

5-Bean Chili 5-Bean Chili
Number of Servings: 30

Ingredients

    20 cans (15 oz) beans, at least 5 varieties (black, white, navy, pinto, great northern, black-eyed peas, etc.)
    3 medium onions
    1/4 cup garlic, minced
    5 large stalks celery
    3 # very lean ground beef (use venison if you can get it)
    one handful parsley flakes
    2 TBS olive oil
    3 large (28 oz) cans drushed tomatoes
    1 small can tomato paste
    1/2 cup jalapeno peppers, chopped
    2 tsp habanero peppers, chopped finely
    chili powder to taste
    cumin to taste
    1/4 cup salt

Directions

Brown beef in skillet. Drain off any fat
Saute onions and garlic in olive oil
Add remaining ingredients
Cook at least one hour, stirring occasionally

Makes 30 2-cup servings. Freeze in 2-cup containers. Microwave and serve with corn bread or corn chips for a quick, hearty lunch.
