Ingredients

    6 oz Boneless Skinless Chicken Breast
    1/3 C Minced Onion
    1 T Minced Garlic
    2 C Chopped Broccoli
    1/2 C Diced Carrots
    1 14.5 oz Can Diced Tomatoes
    1 tsp Oregano
    1 tsp Cajun Seasoning
    1 T Olive Oil
    2 T Newman's Own Family Recipe Italian
    2 Cups Brown Rice

Directions

Cut the chicken into bite size pieces and place in a shallow dish. Pour dressing over chicken let marinate in fridge while prepping vegetables.

Heat oil in a large pot (med-low heat), add onions and garlic cook for about 5 minutes. Add chicken and spices cook for five additional minutes. Add tomatoes and bring up the heat up to med-high. Once the mixture is boiling add remaining vegetables (add water if needed). Cook until vegetables are tender serve half of sauce over 1 cup brown rice.
