Ingredients

    2 tsp canola oil
    14 oz package Jennie-O Turkey Kielbasa
    1 c chopped onion
    4 large carrots, chopped
    1 sweet red pepper chopped
    3 (14.5 oz) cans reduced sodium beef broth
    1 (14.5 oz) can reduced sodium chicken broth
    2 15 oz cans low sodium black beans rinsed and drained
    1 tsp italian seasoning
    1/2 tsp black pepper
    2 (10 oz) packages frozen spinach thawed and squeezed dry

Directions

Heat the oil in a large nonstick pot over med high heat. Add the Kielbasa and cook stirring untill lightly browned.

Add all the remaining ingredients except the spinach; bring to boil. Reduce the heat and simmer, covered, until the vegetables are tender, about 10 minutes. Add teh spinach and cook until heated through, about 2 minutes longer.
