Introduction

I would like to try this recipe with ground poultry or bison. This dish is protein and carb combined, so just add some veggies. Ingredients

    1 cup bulgur (dry)
    1 cup boiling water
    1/2 cup chopped onions
    3 tsp minced garlic
    2 lbs extra lean ground beef (or ground sirloin)
    1 1/2 cup grated carrots
    1 tbsp ground flax
    3 egg whites
    1 1/2 tbsp ground oregano
    1/2 tsp salt
    1 tsp black pepper
    1/2 tsp crushed red pepper flakes

Directions

Preheat oven to 375 F. Combine bulgur and boiling water and let sit while assembling the rest of the ingredients. Mix remaining ingredients in a large bowl. Drain bulgur and squeeze dry.
Add to the bowl. Shape into loaf in a baking pan and bake for about 60 minutes or until juices run clear. May need 2 pans. (I have an extra long loaf pan I used) Let stand for about 10 minutes to set.

    Made this tonight for dinner and LOVED it! My husband had 2 helpings. I altered it slightly by replacing the oregano with allspice and dill (From another recipe I have used in the past. We just loved those flavors.) I'm sure husband will be requesting this recipe again. - 1/17/10

    Incredible!
    Had to doctor this recipe a little since I can't have Cracked Red Pepper, Garlic or Onions (GERD). I ground about 1/3 cup of dried porcini mushrooms and a tablespoon of low sodium soy sauce. My husband gave it two thumbs up when he made the leftover as a sandwich the next day. Thanks! - 2/19/13
