Ingredients

    15 oz canned diced tomatoes
    2 clove garlic clove(s)
    10 large olive(s)
    1 Tbsp Italian seasoning
    1 medium onion(s)
    1/4 cup salsa
    2 pound raw tilapia (or fillet of choice)

Directions

1. Half black olives and set aside (to save on time use small can of sliced black olives).

2. Saute tomatoes in 1 tsp oil or spray pan with Pam Olive Oil. Add garlic, seasoning.

3. Add onions and olives.
(OPTIONAL: stir in the salsa or serve on top when done). Bring to a boil. Place Tilapia (or fillet of choice), simmer until fish flakes easily - about 10-12 minutes. Covering the pan is optional.

    Incredible!
    I tried the med.fish tonight,it was so tasty,and moist, the orange and apple juice gave it a great summer freshness.I plan to use this mixture on some chicken for tomorrow. - 7/3/09
