Number of Servings: 1

Ingredients

    1 Potato, raw, med. size (2-1/4" to 3-1/4" dia.)
    1 tblsp. Fat Free Shredded Cheddar Cheese
    1 tblsp. chopped green onion
    1 tblsp. Sour Cream, reduced fat
    1/8 tsp. Pepper

Directions

Wash, scrub whole potato
Bake unpeeled potato 1 hour 350 degree oven Or
Microwave
2 1/2 minutes full power, turn potato over, microwave 2 1/2 minutes full power
Remove cool, till warm to handle.
Slice in half lengthwise, being careful not to break the the potato skin
Combine green onion, sour cream, salt and pepper in a bowl.
Then fill the potato skin with the filling, sprinkle with shredded cheddar cheese.
Bake 350 degree oven till the cheese is melted and potato heated through.

NOTES :
Do a batch and flash freeze on a cookie sheet. Heat and serve on busy nights.
