Introduction

Number of Servings: 6

Ingredients

    1.5 cup Butternut Squash, cubes
    1 Pears, fresh, chopped
    1/3 cup Pecans, chopped
    2 T. Brown Sugar
    1 tsp Cinnamon, ground
    2.5 T. Extra Virgin Olive Oil
    1 tsp. Agave Nectar (optional)

Directions

1. Preheat oven to 400. Drizzle 1 T. EVOO in bottom of 8X8 pan.

2. Combine Pears, Squash, Pecans, with Brown Sugar and 1/2 t. Cinnamon until all ingredients are covered with mixture. Add 1.5 T. EVOO and mix.

3. Pour into prepared pan. Drizzle with Agave and 1/2 t. Cinnamon.

4. Bake for 40-45 minutes, until squash is soft.

Each serving is 1/4 cup. Yields 6-8 Servings.
