Ingredients

    1 2lb london broil
    beef rub (I use Bad Ass Beef Rub) to taste
    1.5 lb red potatoes, halved
    about 30 baby carrots
    1/4 c water

Directions

Rub the meat with the rub, both sides. Put in a roasting dish. Arrange potatoes and carrots around meat. Season vegetables as desired. Add 1/4 cup water. Cook at 250 F for 2-3 hours.
