Introduction

This recipe was adapted from one of my mother-in-laws family’s favorite recipe. I only substitutes applesauce for the oil. It makes a deliciously moist apple cake.

Number of Servings: 16

Ingredients

    ½ cup Unsweetened Applesauce
    1 cup Sugar (can substitute Splenda)
    1 Egg
    1 tsp Cinnamon
    1 tsp Vanilla Extract
    1 cup White All-purpose Flour
    1 tsp Salt
    1 tsp Baking Soda
    2 cups Apples (freshly grated)
    1 cup Raisins
    1 cup Walnuts

Directions

Mix together applesauce and sugar. Add well beaten eggs, cinnamon, and vanilla. Measure and sift together flour, salt, and soda. Add dry ingredients to first mixture. Stir in chopped fresh apples, raisin, and nuts and combine thoroughly with above ingredients.

Pour into 8"x8" pan and bake in 350º oven until done, approximately 50 minutes.
