Introduction
This recipe was my own creation based on my taste preferences. It is a hearty, filling, high fiber, high protein soup/stew with a slight mexican flair.You could substitute ground chicken for turkey, but make sure it is ground chicken breast.

Ingredients

1/2 lb lean ground turkey
1 cup chopped carrots
1 10.75oz can 98% fat free cream of celery soup
2 14oz cans fat free chicken broth - 33% less sodium
1 15.5 oz can black beans - rinsed (use Natures Promise if possible)
1 cup tomato puree (make sure it does not contain added sugar)
1/4-1/2 cup of water based on your thickness preference
4 oz (approx 3 cups uncooked) Ronzoni Healthy Harvest wide noodles
2 cups chopped fresh baby spinach
Directions
Cook ground turkey in soup pot (no need for oil)
Add chicken broth, cream of celery soup, and cumin to pot stirring to combine.
Next add in chopped carrots, black beans, and tomato puree.
Simmer for 20 minutes
Add in noodles and cook for 2 minutes. Add water at this stage based on consistency preference.
Add spinach and simmer an additional 6-8 minutes, depending on your pasta consistency preference.
