Introduction
This pancake gives me a great energy boost in the morning! This pancake gives me a great energy boost in the morning!Number of Servings: 1
Ingredients

1/2 cup uncooked oatmeal (quick or regular)
3 egg whites
1 Tbsp flaxseed meal
1/2 banana, sliced
Variation: Substitute banana with:
1/2 cup of your favorite fruit OR
1/2 apple and add a pinch of cinnamon for an "apple pie" pancake.
Directions
Makes 1 pancake.
On medium heat, preheat frying pan and spray with cooking spray.
Combine all ingredients in bowl and mix with a fork.
Pour batter into frying pan and cook until pancake can be easily flipped. (I usually wait until the "snap, crackle, pop" sound stops)
Flip pancake. When cooked, transfer to plate and enjoy!
Note: I usually top this with a tablespoon of natural peanut butter or 1/4 cup of nonfat yogurt but it's delicious by itself as well!
